Macerel Tartare With Pickled Veg

A wonderful Tartare of Mackeral, Apple, Radish, Sweet Onion and Cucumber served with Pickled Vegatables
Serves 5
 

Ingredients

  • 2 Large Very Fresh Mackeral :Fine Diced
  • 1 Sweet Onion Fine Diced
  • 1 Granny Smith Apple : 1/2 Fine Dice 1/2 1CM Cube
  • 1 Horse Raddish : Grated
  • 2 Raddish : sliced
  • 1 Cucumber : 1/2 Pealed seeded and Julien/ 1/2 Pealed seeded and Diced
  • 1 Ts Good Creme Freche :
  • 1 Carrot Rbbon
  • 1 Parsnip Ribbon
  • 1 Corgette Ribbon
  • 150 ml Rice Wine Vinager
  • 20 g Sugar
  • 40 g Salt
  • 100 ml Water
  • Lemon

Method

First your pickled Veg
Put the Sugar, Salt, Water and Rice wine Vinegar in a pan bring to a Rapid Boil then take off and add the Cucumber, Carrot, Parsnip, Corgette Ribbons, Sliced Radish and Apple Cubes.
Leave in the pickling till it all cools down.
Now for your Tartare
Wash, Gut, Clean, Skin and Debone your Mackerel and then Finely dice it Then Transfer to a bowl then add you grated Raddish not to much as you can always add more later, Then add a 1 Tbs of the Pickling. (Must be cold before adding) Then add you Apple and Cucumber. Then Mix wel, Add 1 Ts Creme Freche, Mix softly and taste, Add the onion to taste the onion is sweet... But very strong like the Radish in terms of the nose tickle, So dont add too much onion. Then mix and taste you want to taste Everything if ther is something you can not taste add to it.
