mix beetroot carpacchio with rocket salad and parmesan snow

Ingredients

  • Golden Beetroot
  • Red beetroot
  • Rocket lettuce
  • Parmesan Cheese
  • Sugar
  • Salt
  • white wine vinegar
  • bayleaf
  • ollive oil
  • Pepper
  • water

Method

1. Blanc both the beetroot in water adding sugar, salt, bayleaf, whit wine vinegar.
2.Thinly slice the beetroot in carpacchio shape.
3.Arrange in the plate in alternative colours.
Rocket salad:
1. Mix rocket salad with rocket dressing(olive oil, salt, pepper, rocket leaves blend together).
Parmesan Snow:
1. Boil water, add parmesan cheese, allow it to melt, (strain the liquid and freeze it for one night).
4. Addd the dressed rocket salad on hte plated bettroot in the middle.
5.Grate the frozen parmesan on the top of the salad.
6. Drizzle the rocket dressing on the side.
