muffins for toasting

for english style toasted muffins. easy recipe, but works well, and can be frozen.

Ingredients

  • 30g yeast
  • 360ml water
  • 55g sugar
  • 10g salt
  • 1 egg
  • 680g flour
  • 85g soft butter
  • ( semolina for cooking)

Method

mix all on kitchen aid, til a smooth dough is formed.
prove to double the size, knock back and rest for 5 minutes.
roll to 1.5cm-2cm thickness, cut to size and dust with semolina.
dry toast in a non stick pan over medium heat until golden, turn and repeat.
bake for a further 3-5 minutes.
slice open and re toast as required.
