Old fashioned lemon curd

An old recipe, hence the measurements in ounces, but it works!! Lovely as part of a citrus dessert, on it's own, or to flavour marshmallows, mousses, etc.

Ingredients

  • Zest of 8 lemons(a)
  • 1/2 pint lemon juice(235ml) (a)
  • 6oz unsalted butter (b)
  • 1lb 8oz caster sugar (b)
  • 5 whole eggs(c)

Method

Mix (a) in a large bowl, add (b) and place over a pan of simmering water. Whisking occasionally, heat until the butter is melted, and the sugar dissolved. Cool slightly, and add (c). Return to the heat, and cook out over simmering water until the whole mix is thick, at 82 degrees C.
Sieve the mix, and cool immediately.
To preserve, pour into hot, sterile jars while still hot, seal, and chill.
