Pickled cherries

Nice with terrines, better with foie Gras!

Ingredients

  • 1cup of cider vinegar. A
  • Zest of 1lemon. A
  • 2star anise. A
  • 1cinnamon quill. A
  • 6 cloves. A
  • 2vanilla odds, split. A
  • 1cup water. A
  • 4tblsp dark brown sugar. A
  • 450g cherries on the stalk. B

Method

Bring all (A) ingredients just tomthe boil and remove from the heat, pour over (B) in a sterilized Kilmer jar. Seal, leave to macerate for at least 3weeks, up to 6months for their peak.
