Tempura flour mix

Simple mix for a light crispy batter.

Ingredients

  • "00" pasta flour
  • Cornflour
  • Baking powder
  • (optional- Chinese 5-spice, crushed black pepper, wasabi powder)

Method

By volume, mix 3 parts pasta flour, 2 parts cornflour and 1 part baking powder. Add spices if using, then slowly add ice cold water, mix with a chopstick, or the handle of a wooden spoon, not a whisk. When almost fully mixed, your batter is ready to use. There should be lumps of unmixed flour, this adds to the texture.
