Toasted Brown bread icecrem

Unusual icecrem that is very moorish when tried!!
Used to serve it with orange and vanilla poached plums or old fashioned warm treacle tart

Ingredients

  • 175g brown breadcrumbs
  • 600ml cream
  • 2 separated eggs
  • 100g golden castor sugar
  • 1 vanilla pod

Method

Brown the bread crumbs in medium oven until crisp and golden
Make a custard base using yolks, sugar, vanilla and cream
When base is cool stir in bred crumbs and churn
Before fully churned, whisk egg whites to soft peaks and add to churning icecream until fully churned

Small Contribution. Big Impact.

The Staff Canteen has always been more than a website—it’s a community, built by and for hospitality. We share the wins, the challenges, the graft, and the inspiration that keeps kitchens alive.

We believe in staying open to everyone, but creating this content takes real resources. If you’ve ever found value here—whether it’s a recipe, an interview, or a laugh when you needed it most—consider giving just £3 to keep it going.

A little from you keeps this space free for all. Let’s keep lifting the industry, together.
