- 1kg tomatoes
- 1kg Bramley apples (peeled, cored and sliced)
- Glass of water
- Juice and zest of one orange
- 1kg sugar
- 1 bunch basil
- 150ml white wine vinegar
- 1-3 fresh red chillies (finely chopped

Ingredients
Method
Put tomatoes, apples, water and orange in pan.
Cook over medium heat and stir occasionally until soft and pulpy.
Let drip through sieve.
Return to clean pan.
Add sugar.
Bring slowly to the boil.
Boil hard for 5-10 minutes until thick and syrupy, or sugar thermo should reach 110ºC.
Bruise basil.
Put in muslin.
Add to syrup.
When nearly cool take out basil
Stir in W.W.V and chillies.
