Pidy Keeping it Cool with Frozen Babas

Belgian pastry specialist Pidy has expanded their range of convenient frozen desserts to include a range of boozy savarins.

Best known for classic rumbabas, savarins are light, ring-shaped yeast cakes that are traditionally soaked in alcoholic syrups. The popular summertime dessert is then topped with freshly whipped cream and seasonal fruit such as raspberries or strawberries.

Pidy’s new frozen babas are the ideal solution for operators looking to introduce this classic sweet to their menu, but may be unsure of demand. Arriving frozen, chefs can defrost as required to prevent unnecessary food waste. Operators can choose from an original, mini, or square baba, conveniently pre-soaked with rum so they’re ready to serve right away. The range also includes a non-alcoholic option, steeped in a subtle vanilla syrup, as well as an Irish Coffee alternative which has notes of whisky and coffee.

The convenient range joins their ambient counterpart, as Pidy also offers a selection of plain savarins. These cakes come unsoaked, so chefs have more creative freedom to experiment with alternative liqueur syrups, such as creating a ginbaba or vodkababa! Regardless of how operators will want to style their savarins, they’ll have plenty of time to come up with their own unique flairs, as Pidy’s ambient range has a shelf life of up to 12 months. Made from pure butter, the cakes are ready to grab and glaze, and require just a few short hours to chill in the fridge – ensuring the syrup absorbs for the classic soft and spongey texture of baba. But for busy kitchens, Pidy’s frozen babas are quick and convenient to grab and serve as required.
