A quick rundown on Chef Stagiaire this year and all the fantastic restaurants supporting the competition:

Chef Stagiaire Award is aimed at any chef under the age of 25; whether you are a Commis Chef, Apprentice, Chef de Partie, a Sous Chef or even a Head Chef – from any background. There is a simple paper submission of an amuse-bouche of your choice and a main course [using British Lamb].

3 Judges will pick the top 10 applications – the top ten will each go into a semi final kitchen, all of which have a Michelin Star, where you will simply do a 5 day stage and also cook the dish that you submitted. You will be marked on everything, not just the dish that you cook, including ability, character, reliability, enthusiasm, and general behaviour – if you have issues with your cook off don’t worry, you can still make the final as the competition is based on how you perform over the entire week.

The Prize:

The winner will get to do a 1 month stage at 3 Michelin Star Benu in San Francisco with Corey Lee – and then 2 weeks at Six Senses Resort in the Seychelles which is a Six Star Resort where all flights and accommodation will be taken care of by the organisers.

Who Can Enter:

Absolutely anyone, from any background – you do not have to have Michelin or Rosette experience – in fact none of the past winners of the competition had Michelin experience. This is for anyone and everyone as long as you are under the age of 25.
