Avocado In Charcoal Tempura Batter Using Methocel & Activated Charcoal

Special Ingredients Activated Charcoal Powder is a premium quality ultrafine powder made from organic coconut husks. Charcoal powder is a versatile product and has a variety of uses. It can be added to a variety of foods such as bread, cakes, biscuits, icings, ice cream, drinks, cocktails, fluid gels and much more. Our Charcoal Powder has no flavour, odour or aftertaste. It is made from organic coconut husks which are burned at an extremely high temperature and then refined.


Special Ingredients Methocel (methylcellulose) is purified cellulose. To be used in food applications where a thickener, stabiliser or dispersant is required. Methocel dissolves in cold water and gels in hot water. It has the unique ability to form a gel when heated above 45ºC which will then return to a liquid state upon cooling (approx 15ºC). Perfect for creating hot gels which melt in the mouth.

Ingredients

  • 1.5g Special Ingredients Methocel
  • 300g Water
  • 100g Vodka
  • 125g Plain Flower
  • 1tsp Cumin
  • A Good Pinch Of Salt
  • 15g Special Ingredients Activated Charcoal

Method

1) Blend All The Ingredients Together
2) Pour Into A Cream Whipper And Charge With CO2
3 )Chill In The Fridge, Ideally For Around 2 Hours
4) Dip Avocado In Tamari Or Soy Sauce
5) Place Pieces Of Avocado Into Flower, Shake Off Excess
6) Spray Some Batter Out Of The Whipper Onto The Avocado
7) Drop Into The Fryer At 190 °C – Cook For 2-3 minutes Until Crispy
