- 100ml Fresh Grapefruit Juice
- 0.4g Special Ingredients Agar Agar

Method
1) Whisk the Agar Agar into the Grapefruit juice as it is heated, adding sugar to taste.
2) Once the mixture comes to the boil, remove from the heat and transfer into the appropriate container or mould.
3) Leave to set (refrigeration not required).
Note: gels prepared at a higher concentration of Agar Agar for example 0.5% will be easier to handle. Gels made with a lower concentration for example 0.3% tend to have a better mouthfeel but can be harder to handle, demould or cut.
