Allspice Dressing

Allspice dressing

Ingredients

  • 40g caster sugar
  • 125g water
  • 10g allspice

Method

Dissolve sugar and half the allspice in a pan, bring to the boil and remove, clingfilm and leave to infuse for 30 minutes until cold
Strain off and return to the pan and reduce by half to a light thin syrup
Add remaining 5g allspice and clingfilm and leave to infuse until cool
Strain off and fill a plastic bottle, vac pac the remainder in the fridge for up to 2 weeks
