Sea Buckthorn Gastrique

Ingredients

  • 1k Sea buckthorn steeping juice
  • 50g liquid glucose

Method

1. Reduce juice to 115c, remove from heat and whisk in glucose, strain and cool in a small container
2. Fill a plastic bottle and leave at room temperature always for up to 2 weeks, or vac pac and store in the fridge
