Home cured bacon

Ingredients

  • makes 1.5k
  • 1.5k belly pork
  • 2 bay leaf
  • 10 juniper
  • 500g sea salt
  • 100g soft brown sugar
  • 10g pepper

Method

mix the dry stuff
Take a handfull of the mix, rub onto the pork
put in a plastic container
put in fridge for 24 hours
Pour off "pork water"
rub more mix in
keep doing it for at least 4 days
Have a sandwhich
