Banana Bread

Banana Bread

Ingredients

  • 100 g butter
  • 200 g granulated sugar
  • 2 eggs
  • 2-3 mashed bananas
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • 250 g plain flour

Method

Preheat oven to 150C. Grease a loaf tin or spray with non-stick spray.
Beat together the butter, sugar and eggs. Combine the mashed bananas with the mixture.
Add the baking powder, baking soda, salt and flour. Stir until well blended.
Pour into the prepared loaf tin. Bake for about 1 hour and 10 minutes until the cake has risen and is golden. It is ready when a skewer inserted into the centre comes out clean. Be careful not to overbake, or the bread will dry out.
Cool in the tin for 10 minutes before turning out onto a wire rack. While the bread is still slightly warm, put it in a plastic bag or wrap with foil or cling film. The heat will help to keep the bread moist. Slice to serve.
