Make a stock syrup and when boiling add nuts and simmer for 2 minutes, then cool down in the syrup, when cold, lift nuts out into 160c oil and fry to create a golden crust not dark, as this will be bitter
Lift out onto silpat lined tray, spread apart and cool for 20 minutes
Store in airtight container for up to 2 weeks
