chocolate brownies

1. Melt the butter and add cocoa powder.

Ingredients

  • 650g Butter
  • 250g Cocoa powder
  • 8 Eggs
  • 1kg Caster sugar
  • 500g Plain flour (sieved)
  • 300g Chopped walnuts
  • 3 tsp Vanilla essence
  • 3 tsp Bourbon or brandy

Method

Melt the butter and add cocoa powder.
Whisk together eggs and sugar in machine until light and pale.
Add the vanilla and alcohol to the butter mix then fold together with the egg mix.
Fold in the flour and walnuts and pour into a lined tray, approx 2-3cm thick.
Bake in oven for 15-20 minutes at 175*c.
