- • 10 thin, fresh tuna steaks
- • 150ml white wine
- • 350ml cooking cream
- • 175gr small capers
- • 2.5tbs white roux granules
- • salt and pepper

Preparation
1. Slightly thaw the gratins, then slice into halves (horizontally).
2. Place the tuna steaks in between the halved gratins and bake in a preheated oven for 15-20 minutes at 200°C
3. Reduce the white wine.
4. Add the cream and capers, simmer gently (bind with white roux granules if required).
5. Season the sauce to taste, then drizzle the gratins with the sauce.
6. Serve with seasonal vegetable or a crisp green salad.
Tip
Serve half of one gratin and a small tuna steak as a starter.
