Crustless Vegetable Quiche with Maple Syrup

Crustless vegetable quiche made with pure maple syrup from Canada.
This recipe will make 4 portions.


  • 15ml (1tbsp) olive oil
  • 3.5 tbsp breadcrumbs
  • 3 eggs
  • 250ml milk
  • 60ml pure maple syrup
  • 1 small carrot, grated
  • 1/2 courgette, grated
  • 1/2 leek, sliced thin
  • 115g cheddar cheese, grated
  • Salt and pepper, to taste
  • 6 cherry tomatoes, halved


Preheat the oven to 180ºC (350ºF).

Oil a 25cm (10") quiche pan and coat with breadcrumbs then set aside.

In a large bowl, beat together eggs, milk, maple syrup, carrot, courgette and leek. Add cheese and season with salt and pepper.

Pour mixture into quiche pan and top with cherry tomatoes.

Bake quiche for 45 minutes.

Let the quiche stand for 10 minutes before serving.

Serve with a fresh green leaf salad.
