Garlic & Herb wedges with hummus & zingy lemon mayo

Ingredients

  • Ingredients (10 persons)
  • • 1 kg Aviko Garlic and Herb wedges
  • Hummus
  • • 150 g chickpeas (tinned), drained (reserve the liquid)
  • • 1 tsp garlic paste
  • • 2 tbs olive oil
  • • juice of 1/2 lemon
  • • 2 tbs sesame paste (tahini)
  • • 1 tsp ground parpika
  • • salt and freshly ground pepper
  • Lemon mayonnaise
  • • 125 ml mild olive oil
  • • 1 tbs lemon zest, grated
  • • juice of 1/2 lemon
  • • 1 egg yolk
  • • salt and freshly ground pepper

Method

Preparation

Hummus:

1. Blend the chickpeas, garlic paste, olive oil, lemon juice and sesame paste in a food processor to a smooth puree - adding some of the liquid from the chickpeas when required.

2. Season with salt and pepper.

Lemon mayonnaise:

1. Ensure all ingredients are at room temperature, then blend the mustard, lemon zest, lemon juice and egg yolk to a smooth paste, gently adding the olive oil whilst blending.

2. Season with salt and pepper.

Prepare the Aviko Garlic and Herb wedges following the instruction on-pack.

Garnish the dips with lemon zest or fresh herbs and sesame seeds.

Tip:

Combine with Aviko Appetizers for a great platter to share, think about onion rings, Mozzarella sticks or spicy chicken strips.
