- 4oz castor sugar
- 4 yolks
- 2 lemons
- 2oz butter
- 4 tbsp corn flour

Method
Melt water and butter together.
Mix yolks and corn flour together.
Add sugar, followed by juice of 2 lemons and rind of 1.
Cook mix until thick.
Strain.
