Lime ''air'' mousse

Lime 'air' mousse

Component of the Raspberries, Lime and Marinated Blueberries with Chocolate Streusel recipe


  • 90 gr lime juice
  • 140 gr sugar syrup
  • 2 leaves gelatin
  • 30 gr pasteurised egg white


Same method as for the passion fruit version
Warm the juice, sugar and add the gelatine.
Pass through a fine sieve then allow cooling before adding the whites.
Put into a bowl over ice then using an electric beater whisk until light and fluffy.
