Maple and green apple rice

This rice dish is a delicious addition to any BBQ or picnic menu

Ingredients

  • 125ml extra virgin olive oil
  • 2 onions, finely chopped
  • 2 red peppers, diced
  • 250ml maple syrup
  • 500ml white wine
  • 2L chicken stock
  • 1L basmati rice
  • Salt and pepper, to taste
  • 8 Granny Smith apples, diced

Method

In a large casserole dish, heat oil on high. Add onion, pepper and maple syrup and sweat for about 7 minutes. Lower heat, deglaze casserole dish with wine, and reduce until almost all liquid has evaporated. Add chicken stock and bring to a boil before adding rice and season. Cover and cook for 20 minutes or until done then add apples and serve.
