Ingredients

  • 1/2 lb bitter oranges
  • 3 pint water
  • Juice of one lemon
  • 3lb sugar
  • 1/2 oz butter

Method

Scrub and boil oranges in water.
Simmer gently (covered) for 1 1/2 -2 hours till soft.
Cool slightly and roughly chop oranges.
Put back in water with lemon juice and pips in muslin.
Add sugar and heat slowly till sugar melts.
Boil till setting point 106°C.
Stir in butter.
Leave to skin.
Stir gently.
Pot and cover
