Roasted tomato potatoes

Ingredients (10 pers.)

Ingredients

  • 1.5kg Aviko Steam and Fresh Baby skin-on potatoes
  • 100ml vegetable oil
  • 200g onion, sliced
  • 800g chopped tomatoes (tinned)
  • 50g tomato puree
  • Chopped chives

Method

Heat 70ml oil in a roasting tin. Add the potatoes to the hot oil and seal on all sides.
Bake the potatoes in the oven for approx. 40 minutes at 200°C.
Heat 30ml of oil in a saucepan, then add the onions and cook until they are lightly coloured and soft.
Add tomato puree to the onion and stir in.
Add chopped tomatoes and simmer for 5-10 minutes.
Remove the roasted potatoes from the oven and transfer into a clean serving dish. Pour tomato sauce over the potatoes and sprinkle with chives.
