Salt Beef

As an incredibly popular meat within the UK, beef recipes are vast and varied. With a range of beef cuts to consider as well as cooking methods and flavour pairings, beef recipes are varied in flavour, texture and preparation time - give this one a try for yourself! This is bloody brilliant.....love it to bits. Used to use it as a starter and in sandwhiches at a pub I used to work.

Ingredients

  • 2-3k brisket
  • 1 carrot
  • 1 onoion
  • 1 celery stick
  • 1 garlic cut
  • Brine:
  • 5 L water
  • 1k salt ( sea salt is good, but normal works ok)
  • 500g light brine sugar
  • 1 tsp black peppercorns
  • 1 tsp juniper
  • 5 cloves
  • 2 bay
  • sprig of thyme
  • bunch of parsley stalks

Method

Make the brine by boiling the water, add the stuff, disolve then cool.
Cut any nasties off the beef, when the brine is cold add the beef and keep in plastic buckets.
Cover and keep in a cold place for 2 weeks.
After this take out the beef, soak overnight.
In the morning put all the other stuff in a big pan with the meat and cover with water.
Cook for about 3 hours till tender.
Cool.
Eat, hot ,cold, warm....whatever.
Love it.
