Sous vide pork shank

Ingredients

  • Pork Shank
  • Rosemary, chopped
  • Veal Jus
  • Salt and Pepper

Method

Season the pork shank with salt and pepper, place in a bag and add rosemary and jus. Seal with hard vacuum. Place in water bath @ 60°C for 10 hour Once cooked, retain the in the bag and cool in ice water. Do not open the bag until needed.
