Baked blue vinney cheesecake, greengage compote

Ingredients

  • Base
  • 100g butter
  • 225g digestive biscuits
  • Filling
  • 3 tablespoons cornflour
  • 50-100g sugar
  • 450g cream cheese or mascarpone
  • 225g blue vinney
  • 2 eggs
  • 150ml crème fraiche
  • 150ml whipping cream
  • greengage compote
  • 1kg greengages halved
  • Lemon juice and zest
  • 4 tab icing sugar
  • 2 sprigs of thyme

Method

cheesecake
crush digestive biscuits and add the butter press into ring and set in fridge
for filling blend cheeses until smoothg and beat in rest of ingredients
bake at 160oc for 40-50mins until nearly set (slight wobble in middle)
alllow to cool and serve at room temperature
greengage compote
mix everything together place in a roasting tin and
