apple jelly

Boil sweet wine, apple juice, and sugar until dissolved.
Add the bramleys and cook until just soft....

Ingredients

  • 800ml sweet wine
  • 300ml apple juice
  • 2 lemons juice
  • 300g caster sugar
  • 4 bramleys chopped
  • 5 leaves gelatine, soaked

Method

Boil sweet wine, apple juice, and sugar until dissolved.
Add the bramleys and cook until just soft.
Strain through a sieve but don't push through.
Add the gelatine, allow to cool
Either set glasses or spoon on top of mousse.
