Ingredients

  • 3 kg honey melon, peeled and deseeded.
  • 100ml stock syrup
  • 6 tsp lemon juice
  • Tapioca
  • Ingredients
  • 5tbsp tapioca
  • 2tbp caster sugar
  • 1 litre water

Method

Blitz overnight, strain through a sieve overnight.
Serve with fruit wedges and tapioca
Boil over a low heat until tapioca is clear with a small dot in the middle.
Allow to cool
