Ingredients

  • 6 egg + 6 egg yolks
  • 120g sugar
  • 600g butter
  • 900g bittersweet chocolate 70%
  • 120g coco powder
  • 340g sweet pastry

Method

Roll out pastry and line tart
blind bake at 180oc until golden 20mins
Filling
Whisk egg and yolks and sugar to a thick sabayon
melt butter and chocolate together
fold both mixes together and add the coco
bake at 150 for 10-12 mins cool down at room temp
