bread and butter pudding

taught to me my rhodes this is one of his signature desserts and when i make it for people they tend to say best ever b and b so damm rich

Ingredients

  • 1 pint milk
  • 3 pints cream
  • 4 vanilla pods
  • 525g egg yolks
  • 250g caster sugar
  • 1 loaf medium sliced mothers pride 3-4 day old
  • sultanas
  • raisins
  • nutmeg
  • soft butter

Method

butter bread and cut of crust and cut in half into triangles.
Lay down 12 triangles of bread in the try 6 each side the same way overlapping
Sprinkle with sultanas, raisins, nutmeg.
Turn round the tray repeat the layer
Turn around again and layer 8 slices of bread in line each side. No fruit this time.
Boil milk, cream and vanilla,
whisk egg yolks and sugar together.
Pour on milk and cream, whisk, pass, and skim.
Ladle over 3/4 of the custard, press down. Cling film and leave for 3 hours.
Add more custard if necessary.
Cover with tin foil and bake in a bain marie for 20-25 mins at 180oc.
Insert knife it should come out warm.
Remove from tray and blow torch with caster sugar. Keep in top plate or under lights.
To serve cut out a 1 1/2 triangle piece following bread lines. Serve with the custard in bottom of the dish
