Beat 450g of the sugar with the oil and orange zest until smooth.
Add eggs, fold in the flour, mix ...

Ingredients

  • 400g wholemeal flour
  • 2tbsp mix spice
  • 1tsp bicarb
  • 450g grated carrot
  • 500g soft brown sugar
  • 300ml sunflower oil
  • 4 eggs
  • zest of 2 oranges
  • 220g sultanas
  • 100g grated coconut
  • 100g walnuts
  • juice of 2 oranges
  • 2 tbsp lemon juice

Method

Beat 450g of the sugar with the oil and orange zest until smooth.
Add eggs, fold in the flour, mix spice, bicarb, carrot, coconut, sultanas, chopped walnuts.
Pour into tin bake at 150 for 40 mins
make a syrup with rest of sugar and juices of oranges and lemons.
Remove cake from oven poke with skewer and fed cake the juice.
