Ingredients

  • 900g Dark chocolate
  • 750g butter
  • 18 yolks
  • 150g sugar
  • 18 egg whites
  • 100g sugar
  • 300g raisins soaked in 200ml rum
  • 300g split pistachios
  • 300g almonds
  • 300g hazelnuts

Method

melt down butter and chocolate set aside
beat egg yolks until pale, cook 150g sugar to 118oc pour onto egg yolks and whisk until cold.
Whisk egg whites and 100g sugar until stiff peaks
Whip cream until stiff.
Fold chocolate mix into egg yolk mix, followed by egg white mix, then nuts and whipped cream, pour into moulds and set
