Ingredients

  • 460g soft butter
  • 200g soft dark brown sugar
  • 2 eggs
  • 170g black treacle
  • 500g plain flour
  • 4tsp bicarbonate of soda
  • 1tsp salt
  • 4tsp ground ginger
  • 1tsp ground nutmeg
  • 1tsp cinnamon
  • caster sugar for dusting

Method

just mix together butter and sugar.
Mix in the eggs and the treacle.
Sift together flour, bicarbonate of soda, salt and spices, sift 3 times.
Fold into butter mix to form a soft dough.
Chill 2 hours.
Roll dough out to 5mm thick.
Cut into 7.5cm by 2.5cm oblongs.
Place on the tray, sprinkle with sugar, and bake for 20mins
