lemon curd

Good for lots of Pastry items.

Ingredients

  • Makes a Jar
  • Unsalted butter 100g
  • Caster Sugar 175g
  • Med eggs 2, plus 1 yolk
  • 3 lemons

Method

Put the butter in a pan with the sugar
zest the lemons
juice the lemons
put in the butter sugar
add the egg
heat slowly for about ten mins till coats a spoon, mixing all the time
Keeps for a week
