Macaroons

Have oven preheated to 170oC, & Line two baking trays with silicone paper

Ingredients

  • 300g icing sugar
  • 1500g ground almonds
  • 4 large egg whites
  • 70g caster sugar
  • pinch of salt
  • Food colouring, red, yellow, green

Method

Have oven preheated to 170oC, & Line two baking trays with silicone paper
sift icing sugar & ground almonds together into a bowl
whisk egg whites with pinch of salt until soft peaks. Slowly add caster sugar, mixing well.
Add almonds & icing sugar until mixture is glossy & stiff peaks
Divide mix into bowls & add desired colouring
Pipe on to lined trays, about 5cm sized discs, tap tray to dispell any air bubbles
Allow to settle approx 30mins then bake in oven for @ 9-10mins until set
Once cool sandwich with buttercream
