- 2 & 1/2 lb plain mashed potatoes
- 4-6 oz plain flour
- 2 teasp olive oil
- 1 egg
- 1 egg yolk
- salt & pepper
- grated nutmeg
- flour to dust

Method
1. Beat mashed potato, flour & seasoning together
2. Add in olive oil, whole egg & egg yolk
3. Gently bring all together
4. Allow mix to rest @ 30mins
5. Put into piping bag & pipe out to desired size, shape with hands
6. Gently poach once gnocchi rises it is ready
