Nutmeg Custard Tarts

  • 225g plain flour
  • 110g unsalted butter
  • 80g caster sugar
  • 1 egg
  • 500ml semi-skimmed milk
  • 100g NESTLÉ DOCELLO Crème Brûlée
  • 1 nutmeg

Method

Method
Combine the flour and butter until it resembles fine breadcrumbs. Add the sugar and mix well. Whisk the egg and combine with the flour and sugar mix to form a smooth paste. Do not overhandle the pastry. Roll into a ball and cover with clingfilm.
Leave to rest in the fridge for 15mins before rolling out and, using the desired mould, bake blind for 10 minutes in an oven preheated to 170˚C.
Allow to cool before using.
Heat the milk and cream in a saucepan and bring to the boil. Remove from the heat and stir in the brûlée powder, whisking continuously for approximately 2 minutes. Pour the custard mix into the cooled pastry cases and transfer to the fridge to set, approximately 25 minutes.
Once set, remove from the fridge and grate fresh nutmeg over the top.
