Pickled Onions

Love pickled Onions, ever since monster munch brought out the flavour. These are quite hot. Makes a 2l jar.


  • 1.2k pickling onions
  • 1.2 L White wine vinegar
  • 1 L white wine
  • 2 tsp mustard seeds
  • 2 scotch bonnets split
  • 8 bay leaves
  • 8 sprigs rosemary
  • 2 tsp salt


Chuck all the onions with the skins on into boiling water for 10 seconds.
Peel leaving the root intact.
bring all ingredients to the boil
put everything in a sterilized jar....keep for 6 months.
Do not eat for 4 weeks.
