- 225g Tate & Lyle Caster Sugar Drum
- 200g Double Cream.

Method
1) Preheat the oven to 160ºC. Make up the pastry according to the instructions.
2) Line a greased tart dish with the pastry and blind bake.
3) Take the zest and the juice from the lemons and mix with the eggs, sugar and cream.
4) Pour into the tart case and bake for 25 minutes at 160ºC.
