Roast Chicken with feta

From roasted chicken to stuffed chicken breast, chicken recipes are vast and varied. Ingredients

  • ⁣2 tbsp Everyday Favourites Oregano
  • 4 tbsp Condy Lemon Juice 500ml
  • 4 tbsp La Pedriza Pomace Olive Oil P.e.t.
  • 1 Farmstead Whole Chicken 1kg
  • 150g Everyday Favourites Dixed Mixed Peppers
  • 150g Everyday Favourites Diced Onions
  • 100g Sliced Courgettes
  • 200g Mevgal Greek Feta Block
  • 400g Chick Peas In Water

Method

1) ⁣Heat the oven to 180°C. Mix 3 crushed garlic cloves with the lemon juice and 3tbsp of the oil to make a dressing. Add seasoning
2) Make 2 cuts in each chicken leg, put the chicken in a large roasting tin and rub with 2tbsp of the dressing. Roast for 30 minutes
3) Meanwhile, tip the peppers, onions, 5 garlic cloves and courgettes into a bowl. Toss with the remaining oil and season
4) After 30 minutes of cooking, pile the veg around the chicken, drizzle with half the remaining dressing and roast for 1 hour
5) Remove the chicken from the oven, lift onto a platter, cover with foil and leave to rest
6) If there is a lot of chicken fat in the roasting tin, pour some out. Stir in 4 lemon wedges, 3tbsp chopped mint, chickpeas and the remaining dressing. Return to the oven for 10 minutes to warm through
