bitter orange coulis
nice accompaniment for chocolate desserts or as part of a citrus dish. keeps a great vibrant orange colour.
Ingredients
Method
cover the oranges in a pan witcold water. bring to the boil, then refresh under cold running water.
repeat this 10 times.
weigh the fruit at the end, and add an equal amount of sugar. break/chop the oranges and bring gently to a boil, and cook until the sugar is dissolved.
liquidize and pass through a fine sieve.
