  • 820 g Sao Thomé
  • 200 g Manjari
  • 500 g butter
  • 8 eggs
  • 4 eggyolks
  • 1000 g sugar
  • 680 g tipo “00”
  • 4,5 spoon of baking powder


Melt chocolate and butter in a waterbath.
Whisk eggs and sugar until very airy.
Add the chocolate when cooled down slightly and then fold the flour and baking powder in the mix
Bake at 160° for 11 min.
