  • Madeleine - pour 50 personnes
  • 400g blancs d'oeufs
  • 400g sucre glace
  • 160g poudre d'amande
  • 160g farine
  • 400g beurre noisette tiede
  • 2 c a soupe de miel (de chataignier)
  • 1/2 c a thé de levure chimique


Cuire le beurre noisette, stopper la cuisson avec le miel.
Tamiser la farine et le sucre glace. Mélanger la poudre d'amande, mettre les blancs d'oeufs, avec la feuille.
Ajouter le mélange Farine - sucre glace, ajouter le mélange poudre d'amande - levure chimique.
Bien mélanger a vitesse moyenne.
Ajouter le mélange petit a petit miel - beurre noisette.
