Ingredients

  • 450g digestive biscuits blitz to crumbs
  • 100g melted butter
  • vanilla extract
  • 100g grated chocolate
  • Cheesecake
  • 600ml whipping cream
  • 800ml crème fraiche
  • 800g Philadelphia cheese
  • 300g brown sugar
  • 1.2kg white chocolate
  • 60 griottine cherries
  • Topping
  • 400g dark chocolate
  • 2 teaspoons liquid glucose
  • 200ml double cream
  • 60g butter

Method

Base
mix altogether and press into rings
top with a few cherries
cheesecake
Boil half the cream and pour onto white chocolate
Beat together sugar Philadelphia, crème fraiche
Whip rest of cream and fold altogether
Set on top of biscuits
Topping
Melt altogether add butter last and spread over top
