  • 1.8kg sultanas
  • 1.8kg currants
  • 1.8kg raisins
  • 1.8kg mixed peel
  • 1.8kg suet
  • 700g grated apple
  • 1.4kg breadcrumb
  • 350g crystallized ginger
  • 1.5kg brown sugar
  • 1.5kg flour
  • 300g prunes
  • 230g orange zest
  • 230g lemon zest
  • 22 eggs
  • 30g salt
  • 45g mixed spice
  • 1.5L guiness
  • 1 glass rum, 1 glass Madeira
  • 1 glass brandy, 1 glass sherry
  • 1 glass milk

Method

Cream together butter and sugar, add eggs and flour, fold in everything else,
Store in container, covered in fridge for 2 week
put in dariole moulds and steam for 2 hours at 100oc.
