mix flour, butter, lemon zest, salt, and spice until it looks like breadcrumbs.
Add sugar and sulta...


  • 4lb 8oz self raising flour
  • 4lb 4oz butter
  • 2lb 4oz caster sugar
  • 4lb 8oz of apples peeled cored and chopped (half bramleys and half coxes)
  • 6 lemons zested
  • 10 eggs
  • 1lb 8oz sultanas
  • 12tsp mix spice
  • pinch of salt
  • milk to mix
  • demerara sugar to sprinkle


mix flour, butter, lemon zest, salt, and spice until it looks like breadcrumbs.
Add sugar and sultanas.
Add eggs one by one.
Add milk if needed to obtain dropping consistency.
Add apples
Pour into tins sprinkle over sugar.
Bake at 165- 1- 1 ½ hours
