Ingredients

  • 1lb self raising flour
  • 1/2lb caster sugar
  • 1/2lb butter
  • 2oz lard
  • 1tbsp golden syrup
  • 3eggs
  • ¼ lb mix peel
  • 1/2lb currants
  • 1/2lb sultanas
  • 1/4lb glace cherries
  • 2oz shelled walnuts
  • a little milk if needed

Method

Cream sugar, butter and lard until pale.
Mix in eggs until well combined.
Add the flour, nuts, golden syrup, and fruit.
Stir until well combined.
Bake at 140-150oc for 2 hours depending on depth of cake tin.
